Ayurveda considers food to be a source of nourishment for the body, mind, and soul. It classifies food into six categories based on their taste – sweet, sour, salty, pungent, bitter, and astringent. Each taste has a specific effect on the body and can help to balance the doshas, which are the three bio-energies that govern the body – Vata, Pitta, and Kapha.
